Why we started

My name is Matt, and I was diagnosed with coeliac disease in 2022, a life altering moment that propelled me into the world of gluten free living. Driven by my love for pizza, I bought a pizza oven for home, and set out trying different recipes, different products and different methods, forever tweaking them along the way. I finally came up with a base I was happy with, and tested this out on friends and family. They all said they couldn’t tell the difference, and that the pizza tasted amazing! It was at this point, Lauren, my wife, said “You could sell these”.

With a longing desire to show other coeliacs and those with a gluten intolerance that pizza really can be good again, and being able to offer a safe and inclusive option for the whole family, I embarked on an ambitious venture of starting a gluten free pizza trailer.

A gap in the market

Market research had shown me that whilst many pizza trailers offered gluten free bases, these were often pre-made, and due to cross contamination, never safe for coeliacs.

The only way this idea could ever amount to anything, was a completely gluten free trailer, where no cross contamination could occur.

We had to test whether this could be a potential business, or whether there just wasn’t enough demand for gluten free to make it work. We decided to set up selling pizzas from our own home, with everything prepared in a 100% gluten free kitchen.

We set up a Facebook page, and posted across various different coeliac and gluten free groups, advertising our first pop-up pizza night. This proved to be a huge success, and lead us to where we are now!
